The Opportunity
HallMark Veterinary and Compliance Services is recruiting for an experienced Meat Hygiene Inspector (MHI) to join one of the UK’s largest and most advanced meat processing facilities in Bristol.
This is a permanent, on-site position offering professional stability, consistent working hours, and the opportunity to contribute to essential food safety and animal welfare standards within the UK meat industry.
About the Role
As a Meat Hygiene Inspector, you will play a vital role in supporting the Official Veterinarian (OV) to uphold food safety, hygiene, and animal welfare regulations in line with the Manual of Official Controls (MOC) and Food Standards Agency (FSA) requirements.
Key Responsibilities:
Conduct detailed post-mortem inspections on red meat species (heads, carcasses, and offal).
Identify and handle any contamination, abnormalities, or non-compliant conditions for OV evaluation.
Verify animal identification, welfare compliance, and hygiene standards.
Apply health marks and verify carcass identification in accordance with current legislation.
Collect and record residue, trichinella, and TSE samples accurately.
Support the OV in delivering official controls and escalating non-compliance issues when required.
Maintain accurate documentation, uphold site biosecurity standards, and promote HallMark’s culture of teamwork, respect, and professionalism.
Qualifications & Skills
Essential:
FSA-authorised Meat Hygiene Inspector or qualified through an approved route.
Minimum of 6 months’ red meat MHI experience within the UK.
Demonstrable understanding of FSA legislation and the Manual of Official Controls (MOC).
Competence in post-mortem inspection, residue sampling, and TSE controls.
Ability to record data accurately using relevant IT systems (e.g., TAPP, MS Office).
Full UK or EU driving licence (or equivalent with eligibility to convert within 12 months).
Strong communication, teamwork, and time management skills.
Awareness of health and safety and animal welfare standards.
Desirable:
Post-mortem inspection experience across multiple species.
Previous experience mentoring or supporting junior colleagues.
FDQ-accredited qualifications such as:
Level 4 Diploma for Proficiency in Meat Inspection
Level 2 Certificate for Poultry Meat Inspection
Level 2 Award in Principles of the Safe Use of Knives in Meat Inspection
